Here are some of the benefits of the avocado:
• They contains around 25% of the calories and total fat of dairy butter, by weight
• When compared ounce for ounce they provide more heart-healthy monounsaturated fat, fiber, vitamin E, folic acid, and potassium than other fruits.
• Avocados are the number-one fruit source of beta-sitosterol, a substance that lowers total cholesterol better than a low fat diet, and even improves HDL cholesterol.
• It also provides vitamin C and vitamin B6, and about one-third of your daily requirement of folate, a nutrient that helps neutralize excess levels of heart attack-causing homocysteine.

You can use it in place of spreads like butter or mayonnaise.

The green, smooth-skinned Florida avocados have less fat and fewer calories than the smaller, rough-skinned California kind.
Ways to increase consumption of avocados:
You can use fresh avocado on sandwiches and toast for a healthy breakfast snack.

Avocados can also be used as a delicious dip, especially if you use yogurt instead of mayonnaise and add some roasted garlic.

    Hey Ron; thanks for the veganaise tip. I don’t know how I missed that one, but picked some up. This stuff is good enough to eat right out of the jar. A cannot imagine anyone doing that with mayonnaise.

    If you mix red wine, dijon mustard and Veganaise together is makes a great sandwich spread or salad dressing or sauce for vegetables, tofu, fish, or burgers, I have been making it for 15 years. It is not acidic like vinegar based dressing, so it is easier on the stomach.

    Funny that you should mention avocadoes, now that I have to eat lots of salads and steamed veggies, my dressing is guacamole or guacamole and sundried tomatoe paste. If you want to make a really good Panini, take some toasted pizza crusts, you can get some great gluten free ones and breads at http://www.samisbakey.com; load them up with some of your favorite “fixins” and brush is with olive oil, garlic powder, onion powder, pink mineral salt (from Premier Research Labs, it has over 46 mineral), and sundried tomatoe paste, guacamole. Cut the panini into wedges, then perhaps serve with a side salad with more guaca and sundried tomatoe paste, you can add a little water to thin it out and stir and toss. I recently served a crew of set builders and they loved it.
